Edible parts: Flowers, use as a better-tasting, nutritious alternative to lettuce. Dried, as a thickener for soups and stews, the flowers are high in protein. Good batter dipped and fried, as well.
Tubers, easily harvested when transplanting or dividing plants: as much as 300 grams in one square foot of space, 166 calories per 100 grams, 570mg Potassium, and a taste nearly identical to potatoes. Wash tubers, and boil for 10 minutes or so: Use like potato, good in soups and stews, stir fry, cooked like hash browns, ect. For best flavor, choose the lightest colored (youngest) tubers.
